A great summer dessert loaded with Vitamin C!

Here’s a fresh idea! Wash, hull and slice about 2 lbs of fresh strawberries and place them in a large bowl. Sprinkle with 2 tablespoons sugar. Toss gently and refrigerate for a couple of hours.

In a small saucepan, stir together 1 cup of honey, ½ cup water, a pinch of ground cardamom. Over medium high heat bring to a boil stirring occasionally. Boil for 1 minute, remove from the heat. Allow the syrup to cool completely. Pour the cooled syrup over the strawberry mixture, toss gently, cover and refrigerate.

To serve, slice your favorite shortcakes in half horizontally and place them opened in individual serving bowls. Spoon the strawberry mixture with some of the syrup over the shortcake halves, add a dollop of whipped cream and serve immediately. Enjoy! Serves 6
